Thyme One of the many fresh herbs used in many Italian kitchens. The aromatic flavor of thyme complements Southern Italian sauces of hot peppers and eggplants, as well as being a primary herb in soups and stews. 

Basil is a well-known culinary herb that's popular in many Italian dishes. But did you know that there are many other uses of this herb, including its use as a tonic to aid in digestion? 

Sesame seeds may be the oldest condiment known to man. They are highly valued for their oil which is exceptionally resistant to rancidity 

Garlic You'll be hard-pressed to find a savory recipe that doesn't use garlic. Its characteristic flavor adds dimension to just about any main dish, side dish or sauce. And that chopped garlic you throw in your spaghetti sauce might help fight cancer too.

Marjoram An herb of the mint family with oval, inch-long green leaves with a mild, sweet, oregano-like favor. Matches well with: carrots, chicken, corn, duck, eggs, fish, halibut, lamb chops, meats, mushrooms, peas, pork chops, potatoes, rabbit, ravioli, salads, soups, spinach, squash, stuffing's, tomatoes, tuna, zucchini 

Cumin After black pepper, is the most-used spice on earth. A flower related to parsley originating around Egypt (spices have weird family trees), it's followed people around wherever they go. Cumin has an unmistakable flavor: it tastes earthy, musky, gamely, and spicy.

Cumin complements Chiles beautifully, bringing additional heat to a dish while balancing their fruitiness. And for those who want great flavor but can't handle much spiciness, cumin offers much more flavor and aroma for its heat than many Chiles.

Black Pepper A pinch of this is added to almost every type of recipe imaginable. Once used as currency and presented to the gods as a sacred offering, it is fortunate that this most popular of spices is available throughout the year. Black pepper comes from the pepper plant, a smooth woody vine that can grow up to 33 feet in hot and humid tropical climates. They begin to bear small white clustered flowers after 3 to 4 years and develop into berries known as peppercorns. Ground peppercorns produce the spice we call pepper 

Sea Salt The most notable differences between sea salt and table salt is in their taste, Sea salt is produced through evaporation of ocean water or water from saltwater lakes, usually with little processing. Depending on the water source, this leaves behind certain trace minerals and elements. The minerals add flavor and color to sea salt, which also comes in a variety of coarseness levels.Table salt is typically mined from underground salt deposits. Table salt is more heavily processed to eliminate minerals and usually contains an additive to prevent clumping. Most table salt also has added iodine, an essential nutrient that helps maintain a healthy thyroid.
